Job Summary:

The Cook 2 prepares cold food for all restaurants, banquets and special events.

Essential Duties & Responsibilities:

• Chop and mix cold foods.
• Clean and peel fruits and vegetables.
• Set-up all dressings, marinades, salads, sandwiches, and garnishes.
• Prepare mirrors and displays for banquet functions.
• Prepare cold canapés and amenities.
• Keep pantry area and pantry cooler clean and neat at all times.
• Clean, care for and store all equipment.
• Assist with similar work in garde manger area, as needed.
• Assist with "dish-up" function at banquets, as needed.
• Put produce away in produce walk-in.
• Set-up the mise en place for the next day.
• Follow recipe cards exactly.
• Comply with all Pebble Beach Company safety and health policies and procedures.

Absolutely Required Skills:

• Basic knowledge of cold food preparation.
• Basic knife skills.
• Some knowledge of volume production necessary.
